Baking and Pastry (CP)

Baking and Pastry, taught by Susan Muise, will be offered at the CP level starting in the 2023-2024 school year.

Please describe the new course you will be teaching, including main objectives, projects or focuses. 

“The Baking and Pastry class is going to build on skills that students have learned in their nutrition and culinary class. We are going to focus on the history of baking and bread but also go into all different types of pastry and baked goods. So not just savory breads but sweets as well such as cakes, pies, pastries and things like that. Projects will include a lot of lab work in the kitchens but also classwork and designing your own layer cake and things like that.” 

Why do you think this course is beneficial to have offered at Algonquin?

“I think it’s nice to have choices. I have heard from a lot of students from previous years that they like having opportunities to be in the kitchen more and we got some great classes like global cuisine, hospitality and urban gardening. I think this is another avenue that we can offer in the world of food.” 

Why do you encourage/suggest students take this course? 

“I think that it’s a course that students will enjoy. If they like working in the kitchens and they want to have more hands-on experience working in the world of culinary then this could be the course for them.” 

What are you most looking forward to about teaching this course? 

“I am really excited to do new things in the kitchen and I think that I’ve been teaching culinary arts for many many semesters and I’m looking forward to trying some new recipes and some different units.”
